Starting a Distillery

The plan is to star up a distillery and would like to ask you for your support.

Distilling has been a dream of mine and I have spent countless hours on researching, training, experiments and of course enjoying the products.

Currently I am concentrating on developing a Plymouth Gin. This is a gin made from a Non-neutral spirit. I have made a lot of headway in developing this, but for me to be able to create a decent sample to be submitted to our Department of Agriculture (DAFF) for approval, I will need bigger and more effective equipment.

The thing with developing gin is, you can not increase your botanicals in relation to the batch size. For example, if you used 2 cinnamon sticks in 20L of spirit, you can not use 10 sticks in 100L of spirit. That is way to much cinnamon. For pancakes that is perfect, but not necessarily gin.

The second dilemma is, in south Africa you are not allowed to add sugar to a fermentation. So, if you will like to make for example a product that is fermented with fruit, then you can only use the sugar in that fruit.

Grapes are used for wine and Brandy because they contain the most sugar for a fruit. If you want to make use of let say lemons, they only contain 5% of sugar if you are lucky. So, for a 30L wash at only 5% sugar, you will only get about 3 bottles of product out. And that is only if you are at around 90% – 95% effective.

With my current equipment, that I build myself I am not that effective yet. Some things you can build at home, other things you need precision machinery to make.

I am dedicated to this course of mine, as I have already spent more than $847 just in training.
