The goal is to buy a Pølsevogne and sell Classic American BBQ
There are very few places that actually serve “American Food” that is not overpriced and low quality/quantity.
I would be filling the gap that is missing in the current market with real classic BBQ and other classic American dishes.
My focus in the beginning would be selling to students of the Hotel and Restaurant School, at least once a week there is a vegetarian/vegan day in the schools canteen which drives the meat hungry students to either go without or drive them to the local kebab or burger joints. This becomes boring for many people and having a new food type and my sales location being closer than the local shops would provide a great bonus to the business. The smell of cooking meat from the smoker would peak their interest and appetites. I would also offer a few dishes for those who don't eat meat or have specific food requirements.
