Cooking explorations and classes in Oaxaca, Mexico

I am travelling to Oaxaca, Mexico this month, and while spending a couple of weeks in historically one of the most beautiful towns, I want to spend time doing something I am really passionate about -cooking! It would be one of my the most fulfilling travels if I can attend cooking classes in Oaxaca to learn about the local food culture from the most authentic sources, and get drowned in the smells and flavors in the local markets, mexican kitchens, and dinner tables. I will document my culinary explorations in photo essays, and pass on the food-journey (with recipes and lessons from a non-mexican trying to get the traditional oaxacan flavors to your dinner table)! It would be a tasteful journey from here on..
