I made the salsa to eat, because I'm a big fat guy who likes eating salsa. My wife keeps taking away all my delicious salsa and selling it, so I go buy stuff to make more - but when I get that batch finished, she tells me she's already sold all that too. It's pitiful, I tell ya. That smooth, smoky finish with its perfect contrast of sweet and tart, teeny bite of salt and nibble of cilantro! Aaargh! Those chile peppers! The amazing way it makes your scalp sweat while you say, "It's not that hot" - and you would be right. Beautiful oxblood color in the light and doesn't leave a bad aftertaste like some. I've been making salsa for 25 years or so and I gotta say, this is good stuff. I use it for much more than just salsa, too. Chili, soups, tamales, enchiladas - it got its start as a molé sauce attempt. Eh.
